Learn how to make amazing Gujarati Style 'Kadhi Khichdi' with our chef Varun Inamdar.<br /><br />Kadhi & khichdi are both an essential part of Gujarati Food Cuisine. Gujarati kadhi is a Gujarati version of kadhi which is lighter compared to other varieties of kadhi. It is a very popular Gujarati dish made from curd and gram flour. While Khichdi is very nutritious & comforting, and it combines brilliantly with Kadhi. <br /><br />Ingredients for Khichdi:<br />(Serves 4))<br />- 2/3 cup Rice (washed & soaked)<br />- 1/3 cup Moong Dal(split)<br />- 1 tsp Turmeric powder<br />- 1/2 tsp Asafoetida<br />- Salt <br />- 4 cups Water<br />- Emami Healthy & Tasty Refined Sunflower Oil<br /><br />Ingredients for Kadhi:<br />- 1/2 cup Curd<br />- 2 tbsp Gram Flour <br />- 2 cups Water<br />- Emami Healthy & Tasty Refined Sunflower Oil<br />- 1 tsp Cumin Seeds<br />- 2-3 Dried Red Chillies<br />- 1 inch Cinnamon Stick<br />- 1 Star Anise<br />- 2-3 Cloves<br />- 1/4 tsp Asafoetida<br />- 10-12 Curry Leaves<br />- 1 tbsp Sugar<br />- Salt<br />- Coriander leaves<br /><br />Method:<br />1. In a pressure cooker add rice, moong dal, turmeric powder, asafoetida, salt, water, and Emami Healthy & Tasty Refined Sunflower Oil<br />2. Cover the pressure cooker with its lid and heat it over a medium flame for two whistles which will take around 10-15 minutes<br />3. In a large bowl take curd and add untoasted gram flour <br />4. Whisk both of them together and add water <br />5. Now, in a separate pan heat Emami Healthy & Tasty Refined Sunflower Oil <br />6. Add cumin seeds, dried red chillies, cinnamon stick, star anise, cloves, asafoetida, curry leaves to it<br />7. Now, add whisk mixture to the pan along with sugar & salt<br />8. Mix well and allow it to boil for around 5-7 minutes/ till it gets a little thick <br />9. Keep stirring in between, to prevent the kadhi from sticking to the bottom<br />10. Garnish kadhi with some chopped coriander leaves<br />11. Open the lid of the pressure cooker and take khichdi out in a serving bowl and serve it with hot tasty kadhi
